Oatmeal Brulée |

3 egg yolks ¼ cup brown sugar ¾ cup half and half Large flake oatmeal |
Beat egg yolks and brown sugar in top of double boiler until pale and thick. Place over saucepan of boiling water and whisk until pale and very thick, about 4 to 5 minutes. Cool. This mixture can be made up to 24 hours ahead then stored in fridge Fold in cream |

Cook oatmeal for 4 – slightly dry Serve with hot berry mixture It’s nice with the flax muffins |
