Bran Flax Muffins

1-½ cups flour
3/4 cups Bob’s Red Mill Flaxseed Meal
¾ cups Bob’s Red Mill Oat Bran
1-cup brown sugar
2 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon
1-½ cups finely shredded carrots
2 peeled and shredded apples
½ cup raisins
1 cup chopped nuts (I like the texture that almond flakes make)

Mix together

¾ cup milk
2 beaten eggs
1 tsp. vanilla

Mix together and add to above stir just until moistened. Do not over mix.
Bake in muffin tin at 350 degrees Fahrenheit for 15-20 minutes. About 15 muffins
